pinot noir braised beef brisket

this is my ground hog day dinner

Pinot Noir braised beef brisket

2 cups pinot noir
1/2cup chicken broth
1/4cup tomato paste
2and1/2lb beef brisket
2 teas salt divided
1/2teas pepper
cooking spray
8 cups sweet onion
2 tablespoons brown sugar
1 and 1/4 dried thyme
6 cloves garlic sliced thin
4 carrots cut into a one inch dice
2 celery stalks cut into a one in dice
1 and 1/2 small red potatoes cut in quarters
1 and 1/2 teas evo
1 teas dried oregano
1/4 teas ground red pepper
chopped fresh parsley

preheat oven to 325
combine first three ingredients stir set aside
heat a large oven proof  dutch oven over med high heat sprinkle meat with half the salt and pepper coat the pan with cooking spay brown beef on all sides about ten min  remove beef and cover
add !/2 teaspoon salt sugar and onions  1/4 teas pepper and one teas thyme to pan cook for about 20 minutes until onions are tender and golden brown add garlic celery and carrots cook for another five min stirring often, place the beef on top of the veggies pour the wine mixture over beef  cover and place in the oven

bake at 325  for 1 and 3/4 hours


place potatoes in a large bowl add 3/4 teas salt 1/4 teas thyme oregano and red pepper toss to coat arrange on a single layer on a jelly roll pan coated with cooking spray


remove beef from over and turn oven  place potatoes on lower rack in oven bake @325 for 45 min  remove beef from oven increase the heat to 425 place potatoes on middle rack cook for about 15 minutes or until crisp and browned

remove beef from pan let rest cut across the grain into thin slices serve with the veggies and the potatoes sprinkle with parsley and serve   pictures will follow this evening
