chicken salad with strawberries


  • 4 chicken breasts (15.5 oz.)
  • 1 cup strawberries
  • 1/2 cup Greek yogurt
  • 1 table spoon light mayo
  • 2 green onions
  • 2 tablespoons pecans (crushed)
  • 3 tablespoons balsamic vinegar
  • 1 teaspoon lemon juice
  • 1 teaspoon poppy seeds
  • 1 teaspoon salt
  • 1 teaspoon pepper



poach chicken breasts for about 20 min  meanwhile dice strawberries  chop nuts in food processor  slice the green onions add the vinegar lemon juice poppy seeds salt and pepper to a large bowl   plunge chicken into an ice bath  when chilled  add  the greek yogart  and mayo and stir gently
