spaghetti and meatballs for two with leftover for meatball subs

meatballs and homemade sauce


for the meatballs
1 and one 1/2 lean ground beef grass feed
2 slices good quality  Italian bread
2 eggs
1/2 cup milk
1/2 finely chopped or grated onion
2 cloves garlic smashed and finely chopped
2 tablespoon  chopped fresh basil
1 teaspoon salt
1/2 teas black pepper
1/4 of a cup grated good quality Parmesan cheese




for the sauce
2 tablespoons olive oil
1/2 cup chopped onion
2 cloves garlic smashed and minced
1 tablespoon of sugar
2 teaspoons salt
1 teaspoon dry oregano
1/2 teas dry basil
1/2 teaspoon black pepper
1 large can  san marzano tomatoes processed though the food processor till smooth
4 tablespoons amore concentrated tomato paste in the tube

1/2  pound pasta of choice i like the low carb dream-fields  yummy

fresh basil
 grated  fresh Parmesan for the top



in a medium bowl beat the eggs  with the milk add the bread and let stand 5 minutes add ground beef onion garlic basil salt pepper and cheese roll into balls  arrange on a jelly roll pan and bake for 25 minutes @ 425 degrees

in a dutch oven add oil and over a med heat cook onion until tender  add the garlic cook one minute  then the rest of the sauce ingredients     bring to  a simmer  add meatballs and cook about 50 minutes longer adjust seasonings to taste


cook pasta according to  package directions   drain  toss with sauce half the sauce and half the meatballs   arrange meatballs on a platter  top with fresh basil and cheese   i save the rest of the sauce for meatball subs the next day topped with sliced provolone
