honey lemon chicken

1 whole organic  chicken cut up into 8 pieces
salt and pepper to taste
31/2 tablespoons olive oil
1 head of garlic cut on the horizontal
 few sprigs of thyme
sherry vinegar
2 tablespoons soy sauce
3 tablespoons honey
1 lemon sliced thin seeds removed




season chicken with salt and pepper   heat olive oil in a large skillet   brown chicken over a med high heat with garlic and thyme  till golden brown  add a good dousing of sherry vinegar and reduce by half    add the soy sauce then the honey  pour a good ladle full of hot water  add the lemon slices cook  until bubbly and syrupy about 10 to 12 minutes until tender

steamed broccoli and cheddar cheese


tomato cucumber avocado butter leaf lettuce salad with(  thousand island dressing  light mayo organic ketchup sweet pickle )
